Laboratorium ini menyelenggarakan pengawasan mutu melalui upaya standarisasi produk yang terukur guna menjamin keamanan serta konsistensi mutu pangan secara berkelanjutan. Fokus kegiatan riset juga diarahkan pada pengembangan produk yang menitikberatkan pada kajian formulasi presisi untuk menciptakan berbagai prototipe pangan inovatif dengan nilai tambah tinggi.
